Might try looking for Flyte Camp in Bend, OR. The Scribner's have restored a couple of them for their TV show. Reach out to them, they seem like the type of folks that will share their knowledge.
The current method used to seal at the factory is Adseal on the roof and seal tape on all the panel edges. I don't think they use any sealant inside any more. Also that makes it a lot easier to replace damaged panels not having to cut around the old seal that is difficult to separate. If you need a panel on a late model trailer they dial in the VIN in their computer and the computer cutting and drilling machine manufactures it for you.
