Convert to two 6v
How do I wire two 6v for 12v in the photo?
Good morning!*
Do I break the double red connection on the right side of the wall block and the five ground connections, and attach one red from one battery to one black from the other battery and leave everything else as is?
Then hook up the batteries normal, red to + and black to negative on both?
Thank you!

I'm not sure I'm understanding what you plan to do but I think you are good with the first part and not the last.
First, remove your original batteries. Then, as you said, disconnect the red from one battery at the wall and the black from the other battery at the ground bolt. Then connect the loose red and black wires together and insulate the connection well - it will be at 6 volts and can source a lot of current.
That is it.

I would not disconnect it at the breaker.
Leave the existing cables in place. Add the new batteries. Place the "NEW" cable between the POS + of one new 6V battery to the NEG - of the other new 6V battery. Re-connect the exsisting pos + terminal going to your breaker then the exsisting NEG - cable. Done! N
Now you have 12V from 2 6V batteries.

Maybe I'm misunderstanding what you wrote, but leaving the existing cables in place and then connecting a plus to a minus will create a short and a fire. The existing cables tie the plusses together and the minuses together. One set of those has to be removed. If OP disconnects the trailer end of the plus from one battery and the minus from the other battery and ties them together it will create 12 volts from two batteries.
The only thing I didn't address is if there are wires other than the main battery cables connected at the battery those may have to be re-located to keep any positives together at the 12V end and any negatives together at the ground end.

If you want 12 volts from two 6 volt batteries, you wire in “series”. Simply connect the + from one battery to the - of the second battery. You now have 12 volts, measured from the non-connected battery posts.
If you wire two 12 volt batteries in parallel, you still have 12 volts, but the capacity is the sum of the two batteries.

Sorry if I was confusing.
Converting two 6V batteries to series is very simple. (see drawing)
I have 4-6V Lifeline batteries in my 64 and have done others as well. No shorts, fires or explosions so far. lol

Were you able to wire the 2 6v so that when one fails you still have 12v and are able to find another 6v so you can continue with 12v....or not?

In most cases, if one of the two six volt batteries in series fails, it’s best to replace both of them. That way they are matched with regard to capacity, age, design, and voltage.
Same situation with two 12 volt batteries in parallel. If one dies it kills the other one. Another setup that should be replaced in pairs.
I use common GC-2 six volt batteries from Sam’s Club or Costco. I always replace both if one fails. Cheap enough and available darn near anywhere. Just bring in the bad ones and install two new ones. No huhu.
In general, I’ve found if one has died, the other is screwed up as well. Usually it’s men my fault, anyway. $180 lesson learned.
Swapping out just one of a pair of flooded or AGM batteries is penny wise and pound foolish, in my opinion.
If I was running multiple pricy lithium ion batteries, with their own internal battery interface modules, it’s a much different situation. The BIM would assist in keeping the batteries equalized.

In theory, a multi position 1, 2, 1+2, off type battery isolation switch between two 12 volt batteries in parallel or two banks of 6 volt ones in series-parallel could provide a fall-back position. I like isolation switches to kill power “just in case”.
YMMV.
