Yes, many people have done that. I went to a big box store and purchase the cheapest digital thermostat I could find. Most are heating/cooling thermostats. Heating only thermostats are not so common, but can be found. You will only use two wires from the furnace that go to the existing thermostat and connect them to the two contacts for heating (follow instructions). Since there is no power provided through these two blue wires you will need to get a digital thermostat that uses AAA batteries for its power source. Or get a non-battery thermostat and tap into the
12v system for power.

ps:
pay attention to the dimension of the new and existing T-stat. You want to make sure to cover the screw holes for the existing.
ps2: make sure the t-stat is rated for at least 14 volts. (most are higher and that is ok)
