I wouldn't recommend powder coat for that use - although we PC'd the front face panel of our VW Westfalia stove (as it was originally, & stove top is SS), but that's a different use that the full stove top & oven door, etc.
If you mean baked on porcelain enamel as in the original finish, then that's what I'd recommend doing. If you mean ceramic coating like done on classic car & hot rod exhausts - then no, that won't give you the right non-porous, smooth & shiny finish of your original stove.
Take it to Carolina's for a proper re-porcelain enamel it to last, as she's local SoCal. They can also redo other appliances' porcelain enamel too, such as fridge, range hood, etc. at the same time - if you want them to all color match as new.
She used to have a small satellite shop here in Old Towne Orange, but I don't know if it's still there, so call them.

And unless it's running properly at all burners & oven, she can also restore/refurbish/repair all of the workings - but make sure to tell them that it's for Propane & not natural gas, so they know which jets, etc. to use.
They've done a lot of the Old Towne Orange antique home appliances, as well as a lot of Vintage Trailer people's appliances.
