Our refrigerator is working fine on gas, but switching to AC is tripping the breaker within a couple of hours. It automatically resets to gas mode, and if I reset the GFI breaker, it works fine on AC for another couple of hours. No other load is on the AC and we are plugged into a 50 amp line.
Would you suspect the GFI breaker (2017 30' International)?

Yes I would suspect the breaker. I doubt the differential current transformer portion of the breaker is the issue. I suspect the thermal breaker portion is messed up. I would attempt to confirm or measure current draw on the breaker if possible. The refrig is on the same service as all the GFI outlets and I'm assuming you don't have anything else plugged into any of the outlets.
If you don't have a good way to confirm current, you could just replace it. It is a common configuration available online or Big Box store it is a Cutler Hammer Type CL or equivalent.
