Freezer is building up layer of ice/ frost

Also icles starting on refridgerator vent.Note: the trailer is not Level

From your user profile, it appears that your Airstream is a 2000 model which would mean that your refrigerator is likely a Dometic two way LP Gas/120-Volt AC of the absorption type. While it is likely new enough to have electronic controls (assuming that it is contemporary to trailer), it is still of the era that will protest in a variety of ways when operation is attempted in an off-level condition. The best place to determine level with these older absorption refrigerators is with a bullseye level placed on the freezer floor. When the bubble is dead center is when the refrigerator/freezer can be depended upon to be most efficient and least likely to run overly warm or overly cold.

If it were just the refrigerator temperature, the sliding sensor at the back of the refrigerator would be suspect for need of adjustment. With my 2000 era Dometic Americana, I believe that this sensor needs to be pushed up on the fin to lower the temperature or pulled down on the fin to raise the temperature in the refrigerator, but I may have that reversed as I haven't had to touch it in a number of years.

Another possibility if the trailer is new to you, is that the door gaskets may be worn allowing air to enter. Leaky door gaskets and camping in a humid or rainy location can result in excess frost accumulation.

That is normal. These type fridge/freezers don’t have a defrost cycle like your one at home. The longer you use them the more frost builds up until you manually defrost. The more humid the climate and the more you open/close the fridge the faster it will frost up.

Freezer: As AKNate said, icing is normal, and it will occur quicker in higher humidity. Wait until you can’t live with it any longer, and follow the following process.
Also: make sure you are connected to shore power. It will take 12-24hrs. for the freezer to cool back down. Leave the refrigerator closed during the following process to keep the items in the fridge cool.

1. Scrape as much of the frost out as possible. A plastic spatula like a good grips, or credit card works well.
2.Turn off power
3. Place pot of boiling water on a towel inside the freezer, then close the door.
4. Wait 25-30 minutes, open door and wipe dry
5. Turn power back on and wait for the freezer to cool.
The items in your refrigerator will be fine since you won’t be bringing the fridge up to temp. It won’t be any different than loosing power for 40 minutes.
