12 V fridge while driving
Is it OK to leave the Norcold 12V fridge on while driving?

Yes. At the least you should have more than enough battery capacity to keep things going through a normal day of driving, and ideally between the power coming in from the 7-wire harness fed by your tow vehicle and whatever solar you have on the roof, your batteries will stay topped off.
