This is where a check list shines.
I considered one side for arrival and the other for departure and have it laminated.
It's not only hitching and leveling, it's where you store things so it's accessible.
Don't put the Lego's under the power cord.

We have used the LevelMate Pro for two years now
when we get on site, the level it L - R.
then unhitch
then we use the front lift to get a F - B level
all with the level mate
To start it running, we swipe a magnet in front of the unit.
if stooping does not start the unit, this will

See post #25 in this thread. I have a picture of it. I call it a wheel lock since it goes between the tandem axles and prevents the wheels from turning.

Good advice unless you have a slide out. In that case the stabilizers go down prior to extending the slide. They aren't retracted until the slide is pulled backed in and locked in place.
I just wanted to clarify this in case we have any first timers reading this thread who happen to have one of the few Airstreams that have a slide out feature.

Like written in post #34, be sure you take the sway bars off first!!! Not only will they affect the levelness, they will be difficult to take off, or will "take off your hand" when you go to un-attach them. Lesson learned the hard way. Level it with Anderson levelers or blocks or boards, whatever you use, while hitched because you have to move the trailer to do so...then unhitch and level front to back. That being the most critical because that keeps the frig cooling properly.

Chock Up
All I can say is - based on my most recent act of sheer stupidity - chock up before releasing the ball....I was used to unhitching on level sites and I'd release the ball, move the TV and then level...I did so on a hill and the trailer immediately rolled....only the jack self arresting in soft dirt save the trailer. I did a quick look around to see how many people witnessed my idiocy...thus establishing my reputation as a moron - thankfully none!. Oh and screw levels - I use the beer can roll port and starboard / fore and aft to demonstrate where I need to adjust.

Leveling
Two notes:
1) Before unhitching I don't `automatically' place any spacers under the jack to allow extra height. I've been in campsites where front-to-back leveling puts the hitch nearly on the ground. Placing a spacer under the jack and then unhitching will prevent the ability to level in the case I mentioned.
2) About being distracted, I have a backup camera that i use for hitching. One time I was backing up the stinger into the hitch when I spotted a pair of legs I didn't expect. I immediately stopped and checked it out. A `neighbor' saw me hitching, he misunderstood my procedure and proceeded to step in and help out. I could have smashed into him had I not had the camera. Sheeeesh!

This is the most important rule! Plug in and turn on power and heat a cup of water in the microwave to ensure breakers wont trip! Chock your wheels while you wait

This is my favorite method. Drink a few cans of beer FIRST, so you can use them in the process. Then proceed with all the above mentioned steps.
Never fails in over 45 years and 1.1 million miles.
