So many great places!
As a native Californian.... I would recommend much of what has been listed! If you go as far as San Francisco, be aware driving in SF is difficult if you stray off the main freeways, but crossing the Golden Gate Bridge is doable and beautiful. You can spend time near SF camping but it will be pricy. The SF RV Park is actually in Pacifica and is one of the closest parks, but you would still need to unhook and drive into town. With that said depending on your tow vehicle you will find parking extremely difficult for trucks. Many high rise parking areas don't have enough height for a pick up, neither do many of the underground parking areas. And, parking is usually a minimum of $25 - $30 per day. I would call an Uber. Once you are in the city public transportation is pretty easy to get around with. If you want a oceanside place to stay Half Moon Bay has a state park that is very nice, probably no hookups, and can be crowded, but good location. Anthony Chabot Park on the Oakland side is really nice, and there are great hikes, etc. For a treat if you stay and tourist in the Bay Area, be sure and take a ferry over to Angel Island. It was the west coast's "Ellis Island" and has some interesting history. Lots of great trails on the island, but take a picnic, food can be either pricey or difficult to find on the island.
Last but not least, I would advise staying off of Interstate 5 if you possibly can, the road is terrible, and it is full of semi trucks going way above the speed limit, and from Bakersfield to San Luis there are few services, and it is a dreadful drive most of the time. I would stay on 1 as much as you can (but yes there are some road closures in areas) and then go over to 101 when you can.... be diligent on your mapping and checking with CalTrans. The other BIG issue with Interstate 5 is in the winter months they often have serious fog conditions, many times zero zero visibility... so check that often if you choose this route for some reason.
Once past SF there are beautiful places to see, but be aware some places close for the season, so double check ahead of time.... I used several iphone apps that really help when we are on the road, AllStays, Oh Ranger, iExit for pitstop finder, Gas Buddy to find prices of fuel nearby, and Trucker Path (they show truck stops and places trucks can park, so if you have a big rig, it is good information...they also show how many spaces are available, etc.)
