I-40 west of OKC has been resurfaced and widened in the last few years as to alleviate the "porpoising" concrete section through Yukon, so it is much improved. Most of the pavement to Amarillo is good and light to moderate traffic. I can't speak to east of OKC to Ft. Smith and avoided it the last time I have gone east. It will involve turnpikes, but you might consider the Muskogee Turnpike through Tulsa down the Turner to OKC and around the metro on the Kilpatrick. Much better road surfaces, not too much mileage difference and much less stress.
Also, I tried US 50 from Dodge City to Salida, CO 2 weeks ago just for the experience of seeing new country. On the plus side, much less traffic, road surface good to very good. Scenery OK, but it's the feedlot corridor. Returned by I-25 to Raton, 287 to Amarillo. Much easier travel in my opinion.
