I have a 1980 airstream Caravelle 20' and everything I have seen indicates that it is identical to the Minuet in the layout and dimensions. At the height of a typical bed, the distance from the front to the door opening is about 56". A double bed is 54" wide so there is room for a double bed. The curvature makes it smaller than a double bed in some ways, but the interior of the trailer is 7' wide so the curve doesn't wipe out too much of the usable space in the bed. In the normal layout, the dinette table folds,down to make the double bed with the cushions. If you want to make it permanent, you can just unify the top surface and have a single mattress instead of a bunch of cushions that fit together. Best of luck in your plan.
