Chalky Oxidation?

I recently had my entry latch polished and a few days after re-installation I've noticed a white chalky film (oxidation?) started to appear. After about two weeks it has just about covered the latch. It seems to be caused by wet weather.. Does anyone know what this is and how to prevent it?
