What type of screws (and what size) can I use in walls

My 71 AS, never had any towel racks or pot holder holders or any type of screw ever put into the walls. That is great for me, as I don't have a bunch of holes or anything in my walls. I do however, want to put up a towel rack and something to hold pot holders in the kitchen area. What size screw is ok to use in the walls?? I don't want to go through a wall or ruin anything by using a too long of screw.

Hi, use 3-M brand two sided tape. The automotive type, not the household type. [no holes needed]

What wall, exterior or interior partition? If exterior there is about 1 1/4 inches between interior and exterior skins. If it is the interior partition wall they are only 1/8 to 3/8 inch thick. and are a particle board. I thru bolt with washers on both sides if item is heavy. I would recommend 3M "Command" decorating clips. They work well for light items and can be removed with out leaving a mark or holes if you decide to remove later.
