Our first Airstream was a 2001 Safari 25. I don't remember the bathroom, but the galley was a thin vinyl formica-like sheeting that was adhered to the inside aluminum skin. I put stick-on bright aluminum mosaic tiles over it. The bathroom of our 30 Slideout is similar, but with a wallpaper border. I can't remember if we peeled the border. I put stick-on ceramic tiles on it. In either case I would be concerned about flexing of the substrate popping off real ceramic tiles stuck with mastic. If you have a plywood backing that is thick enough to not flex it should be OK.
