What you are proposing was common in 1960s Airstreams. Very few of the 1960s floorplans included dinettes; rather, there was a compact drop-leaf dining table with folding Leg-O-Matic chairs. In my travels, the compact drop-leaf table has been more useful than the dinettes in my first two RVs. The photos below are of my compact drop-leaf table in both open and closed positions:
In the photo above, both leaves are open and it provides sufficient room for four adults to dine. The table top usually matched the kitchen formica, but I asked the Fowlers to recreate my table-top in oak to coordinate with my coach's woodwork.
In the photo above, you can see how compact the table is when both leaves are lowered. Another nice thing with these little dropleaf tables is that they make excellent under the awning dining tables as well.
