Look at the labels, take the wattage and divide by 120. If data not available, a fan draws very little, griddles, coffee pots, etc. 10 amps each, or more.

Theoretically, any ONE thing inside your Airstream will function quite well on a 20 amp circuit. Even the air conditioner. The problem comes when you want to run the converter to power lites/ fridge, and something else like AC or Mr. Coffee.
The problem I have run into is that adapters for plugging into 20-amp service are only rated for 15 amps, and have a tendency to melt all over everything. I finally made my own with heavy gauge wire.
Keep in mind that some of the 20 amps will be used by the converter and the refrigerator. You can eliminate the refrigerator by switching it over to gas.

I have been told new refrigerators, i.e. non-vintage ones, require 12 VDC (in addition to gas) to operate the electronics.

True, but OP was asking about AC current drain. On AC, the fridge draws around 3 amps from AC. 12V drain is less than an amp, one tenth of that at the input to the converter, so negligible.
