circular sink cover

Our 23 ft international came with a circular sink cover which can be used as a chopping surface. Since the kitchen counter area in the 23 ft is quite small we like to leave the sink cover on but that really restricts use of the faucet and sink. We’re thinking of cutting a “V” or a “U” in the cover so we can run water in the sink with the cover still in place. This would allow us to rinse and chop veggies without removing the whole cover. Has anyone tried this?

I just started thinking about something similar. Maybe rotate the spigot to one side and cut that area out of the cover. But if you don't make it big enough splashing will get all over. I may make a copy of the cover with a scrap of plywood and try it out. Then if it works, cut the cover.
