Doing your own laminate is easy, but not cheap, unless you own a router already. Pull the counter top, take it outside and trace it onto a new piece of plywood, matching the thickness. If the original had wood edge strips add them now. Then get the contact cement sold over in the counter top area. Glue the edge strips on first. Your next move is up to you. Using a laminate trimmer bit in your router you trim it flush with the top; if you want the laminate beveled, use a beveled trimmer. Then glue the top on, and use the flush bit to cut out the sink, then repeat your edging trimming, like you did the edge strips. If you take your time, and use the right glues and prep your surfaces appropriately, this is a very simple job.
