The third wire
I've had to replace one of my batteries and I've reconnected them except I've got one wire left and I can't remember where it goes. I've hooked up the big black one, the big red one, and the smaller ones to hook the batteries in parallel but I've still got one left. Where's it go? Next time I'm taking a picture before I start taking things apart.

We really could use a picture... Does the wire have a connector on the end?
Are you the only caretaker of this AS? If not, might the previous added another 'feature' the other wire is powering?

The wire is PROBABLY going to be a secondary positive feed.
I cant say this for certain though.

Thanks for the input. I sent an email to customer service at Airstream. Their reply: It goes to the positive terminal. That's the wire that goes to the jack and breakaway. Problem solved!

The third Wire
Here's the picture. It may be hard to see. The Third Wire is the one coming from the bottom left and connected to the positive terminal of the lower battery. Thanks for the suggestion for a note on the battery door. Great call!

My third wire is the hot wire for the jack. It looks just like your photo shows.

I took a picture with my smartphone a while back, and keep it on the phone, that way I never "forget" which wires go where. The single wire left over played with me for a while as well so I traced it to the jack. Positive.
