Going around in circles

Hello,
I am currently remodeling the interior of my argosy and plan to go to tankless water that requires a 12 volt power. I intend to swap my univolt for a boondocker 60 converter and a fuse panel from bestconverter.com. Here is where I get confused. I am not sure if I should keep the original circuit breaker box in the argosy or if this will be replaced. Also I have noticed that the newer converters plug into a 120volt outlet in the wall. I do not currently have one of these installed in the area that the univolt is in. I am in need of some guidance in the right direction. I have search in the forums and the more I seem to confuse myself. I will put up a some terrible pictures that I have of my setup at the moment and will try to get some better pictures tom. any advice on where to look or how to do this will be greatly appreciated. my original converter in my 72 Safari was hard wired. I just used the romex from the original hard wire and wired a 120 volt plug in in a metal box. you can see it here in this picture I'm almost finished with the electrical I need to get a battery and wire it in to the trailer.

If your Univolt is hardwired, take the romex that feeds the Univolt (do I need to say to disconnect all electrical input including batteries first?) and use that to wire in a new 120v outlet that you'll plug the Boondocker into. The circuit breakers should be tested also before you use them - it may be best to just replace them.
You're working with 120v, so be safe!

Why is this so clean? Shouldn't a 72 have a lot more dust and discoloration?
