Going to assume you have two 12 V batteries.
For the large cables, it is fairly easy, red goes on positive and it does not matter how or which though evenly distribute them to the two positive posts. Red jumper connects positive to positive for multiple batteries. Get all the positives connected first. The smaller wires are inconsistently colored. Any red wire goes to positive. Some black wires may be positive so you will have to track down where they go. Once you have all the positives connected, connect the negatives again with a jumper negative to negative. Send pictures of any wire you have a question about. Would send a picture of mine, but it won't help cuz it won't be the same.

So the black wires would go to the negative and the red wire would go to the positive

For the larger cables, yes. In the battery area, all red wires will be positive. Non-red wires can be either. The smaller wires especially are inconsistent. I have two wires, one for the tongue jack and another for a suitcase solar charger connector that are black for the positive. The jack uses the trailer frame for negative, the solar has a black wire for negative as well.

I would buy a sheet of 1/8"silicone and cover all the exposed terminals. In case of the unfortunate event where the batteries come in contact with any grounded metal you would have a fire, especially knife switches.

rintintin, we have solar on our GT but I do have a photo from our 2018 FC23FB with Interstate batteries. I would expect them to be close if not the same.
Good luck!

Here is an overview pic of the stock wiring on my 2020 Flying Cloud 27 with no solar, first pic is the whole box and the following four are each corner close up. Hope this helps,
