Would this type of charger be ok to leave on my 2015 27' International while it is in storage? My concern is how it might affect the converter.

It won't affect the converter.
Be sure there is sufficient electrolyte in the batteries, add distilled water if needed, before and after using. A 2A charger will cause some loss of water.
I've never been sure of the fire safety of those things. I had one once on a car I rarely drove, but I added a fuse to the DC side of it.
