Hello fellow Airstreamers! First time Forum user here, and 3rd generation family owner of 1967 Ambassador. Need a fresh water inlet cap (the exterior aluminum (?) cap for the neck that feeds the plastic fresh water tank under couch seat) but don't know where to look. Any help out there?

You can get a galvanized steel cap from a plumbing store, or you can get a comparable cap to what you had from Vintage Trailer Supply or Inland RV. If you have to have something this weekend, you could just get a PVC threaded cap, and use it until you get a real one.
