Welcome from another Coloradan: And welcome to the vintage Airstream hobby. I enjoy it. I spent all winter assisting my friend in renovating his 76
Sovereign 31'. It had the usual "veil of tears" with rear end separation, rear frame sag, bad axles, rusted outriggers, holes in the subfloor, bad plumbing, cracked plastics in the bath, delamination of some of the cabinet walls, and some electrical problems. I've seen worse. All in a day's work.
But the Sovereign can be built into a very comfortable long distance travel trailer. It has wiggle room and good storage space. We kept most of the original layout except in the front room. We rebuilt all of the cabinets. My friend and his family had it out just last week for a week in the mountains.
So you can build one too. These Forums will assist you with your questions. Take a look at the Knowledgebase near the bottom of the Forums page, select Sovereign and stay up all night reading. You can learn alot about the renovation process for your trailer.
