Hello from Colorado: The Excella name has been around since the early 1970s. You have a nice Airstream. I'm with you, twins make more sense as they are easier to make up and the like. We have a 86 Limited 34' with rear twin beds.

So I would start by sketching your design for the rear twins. Then removing the existing furniture carefully. It will come out the entry door. Now built the new twin bed framework. Airstream uses plywood as a mattress support, and the plywood lifts up to access under bed storage. You can order foam on line and cut it to fit the curvatures of the rear of the trailer. I like to have the headboards and reading light toward the bulkhead walls where the mattresses are wider, and my feet toward the rear window where the mattresses are narrower. Here is a photo of the Limited rear twins with no mattresses.

Brian,
Good luck with your conversion, and many happy travels to you!
Someday we are gonna make it back up there.

I use 1/2" sanded both sides plywood for the mattress support. I applied polyurathane to both side of the plywood. There are "slats" to support the plywood about every 3' under the plywood. These are hinged so the bed can be lifted and gain access to under the bed storage. There is a prop rod to hold the bed up. I used 3/4x1 1/2 red oak dimensional wood for slats as it is very strong. I made my twins bigger like 32" wide instead of the Airstream 28" wide. The photo is the twin beds I made for my Overlander. It is a twin bed, rear bath layout. Completely different than your Excella.

You're most welcome. These Forums have helped me in so many ways over the last 10 years. I enjoy working on these old, dirty, smelly, rusty, broken Airstreams and making them comfortable and reliable travel trailers again. And I like making them suit our needs. You want rear twin beds, you can build them.
