Next Monday I pickup my new (to me) 2014 Airstream Flying Cloud 30. I think I am ready. I don’t want to go overboard but I don’t want to miss anything obvious. I am going to be too excited to think clearly so I want to write down on a piece of paper (or my iPad) the things I should look at.

You are right. I think they are stabilizer jacks. The manual kind too. So just planning on making them go down, and making them go back up with the included tool.

That a very comprehensive list. It should give you a good idea of how everything is working.
One small point. Your list includes "Test leveling jacks" Airstream trailers do not have leveling jacks. The crank down stabilizers are not used to level the trailer.
