Wanting to Converting rear bathroom to rear queen.... can this be done reasonably eas

I just purchased a 1969 sovereign airstream with a rear bathroom set up. Iím wanting to get the airstream and possibly put a rear queen bed in the back area. Is this something that is possible? I understand that it would require me to rewire and replumb but since Iím turning my airstream into a tiny home mother-in-law concept I am willing to go and do that. Just wanting to know if it would be almost impossible to do it
