One Pot Recipes!

We will be traveling for two weeks and are looking for easy, tasty dinner recipes that we can cook in one pot or a pot and a frying pan. We have chili and pasta sauce recipes. We are hoping for dinners without pasta. Any ideas? Thanks in advance!

Mushroom and wild rice soup is a favorite with us. Use mushroom broth and parsnips for a hearty flavor. Sweet peppers? Fennel?You decide! Us old folks go easy on the cream.
The wife often freezes a meal’s worth and uses it in place of an ice block in the cooler.

Mexican Hot pot is one of our favorite, serving it over shredded cabbage is great since the cabbage in the bag lasts awhile and all other ingredients are in a can.
