Great rally. Did a shopping trip to Cabella's, farmer's market on Saturday, open house and food. Bonfire at night and a balloon launch. Many thanks to the hosts. It was great seeing old friends and an opportunity to make new ones.


Again-thanks for a fun time and appreciation for all the work that was done.

Well done Dave and Rhonda. We sure had BARREL OF MONKEYS FUN!!!!! Watching Larry's fire building abilities was way cool. He sure does make the ring glow. Thanks for a great time and lots of memories.

Hey everyone! Got a few requests for the wing sauce recipe.

Traditional Sauce:
1 stick of butter melted
1 cup Frank's Louisiana Hot Sauce
4 TBS. Tobasco Chipotle Flavored hot sauce. (you can add original Tobasco to increase the heat level)
2 TBS dark brown sugar
4 tsp cider vinegar.

Mix together and pour over cooked wings. Enjoy.

How about the lime cilantro wings?

Here is the Artichoke dip for those interested
1/2 cup mayo
1/2 cup grated Parmesan cheese
1 med onion chopped
2 green onions chopped
combine these ingredients
stir well and then add a 14 oz can of drained and chopped artichokes
stir well again and then bake at 350 for 20-25 minutes

The rules are different for us, DOGS ARE ALLOWED for TCT. The posted rule is for normal park season. TCT takes it over the week before and the week after the park officially closes. Everyone has dogs there including me.

More requested recipes

Here is the procedure for making the pickled garlic some of You liked.


Fill a Glass jar with fresh garlic and cover completely with rice vinegar or white vinegar. Let set for 3-4 days
Pour off the vinegar and refill with vinegar again. Let set another 3-4 days.
The vinegar is the most important part , to rise the ph of the garlic so botulism is not a issue
(hopefully for the next step You have paid attention to how much vinegar it took to fill the container)

Mix soy sauce (Find a Asian Market and buy a Korean or Chinese soy sauce ,La choy or Kikoman just don't taste the same and come in much smaller containers) Vinegar and sugar to taste. Make double the amount that the vinegar alone took to fill the jar.

Boil this mixture and reduce it by half. Fill the jar covering the garlic and wait 3-4 months.


Peanut Butter Pie

For the crust;
1-1/4 C. Chocolate cookie crumbs (about 20 cookies)or graham crackers
1/4 C. Sugar
1/4 C. Butter
or the easiest is the store bought prebaked shells

For the filling;
8 oz cream cheese, softened
1 C. creamy peanut butter
1 C. sugar
1 T. butter, softened
1 T. vanilla extract
1 C. heavy cream, whipped

For the crust; Combine crust ingredients; press into a 9 inch pie pan. Bake at 375 F for 10 min. Cool.

For the filling; In a mixing bowl, beat cream cheese, peanut butter, sugar,butter and vanilla till smooth. Fold in whipped cream.
Gently spoon into crust.

Had a fun filled weekend. Thanks to Dave and Rhonda and everybody who helped out. Renee and I will not make the Fall TCT Rally @ Milford. Renee has to work, I'll be camping in Baldwin with our snowmobile club.

Thai Cilantro Wing Sauce:

Juice from 4 Limes
4 TBS Fish Sauce. (available in asian food section of most grocery stores)
4 TBS Water
1 tsp Sugar
1 Bunch Green Onions sliced (use green and white part of onions)
1 Bunch fresh mint leaves chopped fine
1 Bunch fresh cilantro chopped fine
1 tsp toasted sesame oil (available in asian food section of most grocery stores)
optional: you can thinly slice some Thai chiles or serrano peppers if you want to add some heat to the recipe. I would probably remove the seeds though.

Mix everything together and let it rest for awhile so the flavors come together. Will keep in refrigerator of a week or so.

Ahh jeepers... I just saw that on Camp Dearborn site and blew a fuse..... I asked Forrest if I can get my money back but if you are saying we can bring the pooches... Then we are comin.

Jill, Kiernan, Lexie and I had an awesome time with you all and we really like hanging with you and want to more... .So hopefully Camp Dearborn lets us bring Lexie 'cause we come as a package.
