PEX is for water lines. If it is being used in newer trailers for propane, that a new one on me!
I have seen yellow plastic pipe being used for natural gas, but I do not know what material it is (PVC? PEX? ABS?)
On my trailer PEX is slid over the copper propane lines as a protector.
You can use a combination of copper and black iron pipe for propane, but personally I would not do that due to corrosive action between different metals. You would have to buy special fittings for the transitions.
