Sink replacement
I never replaced the sink in my 2014 because of difficulty with the microwave mounted close under the sink. It can be done, but it is a lot easier on my current 2018 GT.
The new sink comes FedEx on Tuesday. It was not in stock at my local Lowe's. The faucet I wanted was in stock and I bought that.
I pulled out the old sink today and mounted the new faucet.
The sink comes out easily with four small Philips screws. You can loosen the screws and rotate the plastic locks out of the way. I simply removed the screws and recovered the loose parts under the sink.
I was surprised to find back-flow preventers in both the hot and cold lines. I guess this is required since the spout on the old sink could be under water and siphon back into the lines. The back flow preventers work like tire valves.
The waste goes into a vertical Hepvo waterless trap. I may be able to use the waste assembly as-is, but I'll need the new sink on hand to know.
The end fittings on the PEC are a couple of inches short of reaching the new faucet water inlets. I bought plastic extensions at HD. By loosening the straps on the PEC to get some movement, the extensions just reached. I'm still having fits getting the cold water connection water-tight. I'll re-visit that problem when I am next at the storage yard on Monday.

Now that I know that it can also be done on the Lounge I will be following your steps.

My current Hepvo valve has just 3 months of use, so it should be fine for quite a while.
Thanks for the pointer to getting a top. I do a lot of wood working, so I'll probably make my own. Keeps me off the street!

You were the one one that messed me up with what you did, lol. I stopped pursuing the idea of changing it when I thought it could not be done due to clearance issues with the microwave.
A fellow owner in Facebook did it and shared the parts he used to make it fit. The trick was using a shallow sink trap.
I will want a matching board to cover the stove as well.

One concern I had... the sink trap to use in the Lounge to make this work, does not have a drain plug. I thought that plug served two purpose and one was to avoid odors coming into the cabin from the gray tank. Or is that solely handled by the waterless membrane trap that these rigs have?

No trap in mine, either. The waterless Hepva valve acts as the sink trap. Any pressure from below just makes it seal more tightly. Same thing for the shower except that that Hepva trap is installed horizontally under the shower floor.

Ready for the sink
Stopped by today to get the faucet connections water-tight. I ended up with 2 sets of plastic faucet extenders end to end to get enough length (about 5") to reach the PEX fittings. I discarded the unnecessary backflow preventers and the gray couplings. I'm sure the backflow preventers are there just because the faucet can be submerged in the old sink.
An hour of water pump pressure and all is dry.
I rolled lengths of plumber's putty around the periphery of the sink opening, ready to seal when I drop in the new sink.
I padded the wall area where the weight on the pull-out spout hangs so that it will not bang on the plywood when driving.
Email from FedEx: sink is in Austin and will be delivered tomorrow.

Waiting for FedEx
AI is in the driveway, waiting for FedEx delivery that is usually just about noon.
In the mean time, I mounted the magnetic bar that I have been meaning to mount for some time. I mounted the bar on some scrap Lexan so that items hung on the bar would not rub on the mouse fur wall. I padded the screw heads and pop rivet ends on the back so that the mouse fur will not be marred.
I screwed it to the wood strip behind the cabinets, mounted on a nice trimmed piece of laminate that I had salvaged when I eliminated the bed extensions. I cut the laminate down to 1 3/4" wide and all three visible edges are trimmed to match. I had some nice brown screw caps in the shop, so everything is nicely trimmed.
The silverware drawer is quite shallow and it is nice to get items such as bag clips out of that drawer.
Now, for FedEx!

Still waiting
The new sink didn't get into Austin until this morning. Apparently, although a trace showed it was out for delivery, it must be on the late truck. That means, it may be just about dark when it arrives.
In the mean time, I have been busy doing a list of smaller items that I have been avoiding. Principal among these is to rip apart the teak floor cover I saved from my Lounge and rebuild it for the GT. I made a cardboard template and it took just about an hour to rip the thing apart, plan the parts arrangement for the GT, and assemble it. I had one piece of teak left over. It fits the GT like a glove.

One more step
Sink is installed. Tightening the clamps was a real pain in the whatsit. Hard to get my fingers up there and hard to see what I was doing. I have 4 of the 5 clamps installed. The remaining clamp can not be reached and will not be installed.
I need to redo the drain piping. The drain is lower and a bit further away from the Hepva valve. The plastic strainer that came with the sink is very deep ... over 4" deep. I ordered a 2.7" deep stainless steel strainer to come tomorrow. By using the shallower strainer and pushing the Hepva valve down as low is possible, I can just fit a drain without any fancy tricks.

Third time is apparently the charm! Notstock removed his about two weeks ago, but I missed that one, too. I'll PM you.
I've got some corrosion happening at the plug joint, so I'm looking for one to have as a back-up and/or for certain parts, just in case I need it. It's a European sink. They are difficult to deal with if anything goes wrong, short of buying a whole new one.
I'm not sure that our sink models are exactly the same, but for the cost of shipping I'll gamble. And then if it doesn't work out for me, I'll ship it to the next owner who might could use it.

Jingle Bells
Took the AI back to storage this morning and learned something. I had some cutlery loose in the sink and it played Jingle Bells on anything except the very smoothest roads.
I noticed that the old sink had a patch of sound deadener on the bottom. I am going to need a similar patch on the new sink. The sink bottom is about twice a large as the old sink and can get quite loud.
My plumbing job held water overnight with no drips, so all that is needed now is sound deadener and a cutting board to go on top.

I settled for the cutting board made by the sink manufacturer for $55. Not worth the labor making one for that.
Cutting board is in my workshop while the second coat of oak stain dries. It will get a couple of coats of clear poly over the stain.
We had the AI out last week for a couple of nights at Lake Georgetown. It was so nice using the new sink. I will not miss the old one.
