In the Sprinter 2019 and newer jack is located behind a panel found below the passenger seat. In the foot well area of passenger side.

I have a 2022 I19 with a 2021 Sprinter chassis. Where you describe is where Mercedes puts the jack BUT I think Airstream uses that area to install other equipment and since there is no spare they likely believe there is no need for a jack either.

Behind the plastic panel is a metal close out panel. There is no jack.
