adjust CIPA mirrors

Just unpacked a new set of CIPA towing mirrors for my 2013 Avalanche. Great fit and easy to apply!
My question is what am I trying to see? I would assume that the best plan would be to use the additional mirror for a long view down the adjacent lane and the stock mirror for close in, toward the blind spot. My old radio friends "Click and Clack" of NPR CAR TALK, say that most people do not have their mirrors adjusted correctly, and offer some simple tips for set up. I'd love similar hints for trailer mirrors.
