Happy Hour Snack Favorites

Hi Everyone,
i'm hosting a rally for our local WBCCI group in September and will be planning a Happy Hour so everyone can meet each other and "break the ice" if you will. I'd like to get some ideas of what kinds of snacks/appetizers are popular for Happy Hours. I don't want to just open a few bags of chips/popcorn. I'd like to offer something more substantial that everyone would enjoy to help kick off the rally. Your ideas/recipes would be most appreciated. Thanks!

At rallys, people seem to overeat during Happy Hour and than not hungry for dinner. One rally we go to, the host supplies hot dgs and buns and others bring the toppings or a side (finger food). Liquid in one hand and dog in other. (Moraine View)


The next rally we go to, the host has suggested bringing favorite Hors d' oeuvres as a combined Happy hour dinner. (Northern Illinois)

I always take meatballs and or a veggie/dip tray. Cheese trays with all the extras are great...bonus for the various dried meats...

I like when our rallies have each family bring something for the group. Usually plenty of variety and always fun to sample faves from other people's perspectives.

Our favorite is what we call "snausages". Just take a pack or two of cocktail sausages like Little Smokies or similar. Put the in a bowl with some of your favorite bar-b-que sauce, nuke them for a couple of minutes, put the out with some tooth picks. This is stand-up fine dining.

I love to do jalapeno poppers -brown a pound of Jimmy Dean Sausage, add a package of cream cheese and a cup of shredded cheedar, mix well. Split jalapenos in half lengthwise and scoop out the seeds and ribs to make tolerable. I do this under water in the skin - easier on eyes. Stuff the peppers and bake for about 20-30 minutes until a little brown on top and melty. They will go quickly!

Here is something to consider if you want to attract and retain younger members to keep your club going in the years to come:

Younger members tend to be more health conscious. Provide more vegetables and healthy alternatives. Also, having less variety of food reduces the temptation to try everything. In my opinion, it is better to have one or two quality items than many junk food options.

Simple is better. Takes the stress off of deciding what to bring.

Grilled Veggies

We've served grilled veggies (bell peppers (various colors), mushrooms (ok they are a fungi), squash, zucchini, sweet onions, cherry tomatoes, etc.) tossed in a simple marinade of balsamic vinegar and olive oil.

They seem to go over well and are suitable for hors d'oeuvres and/or the meal.

The grilled veggies can also be prepared to be gluten free, diabetes diet sensitive, and low carb if desired.

White Wings (from Hill Country Texas)

Chicken Brest
Bacon (thick sliced)
Can Japlenoes (whole)
One white onion
Toothpicks

Slice Brest into strips about an inch wide
Slice japs into long slivers
Slice onion into slivers about the length of japs

Lay the chicken, japs and onions along beside each other and wrap with a bacon slice about 4 inches long around the strips.

Stab with the toothpick to hold together and lay over a bbq grill (hot) until the bacon is cooked, flip
till cooked well.

Serve with dip of you choice, ranch works well, and beverage of your choice.

At our 4CU rallies we have gotten away for having BOTH a happy hour AND a pot luck on the same evening. It's too much food and, and worse, some must leave the happy hour to fix their pot luck dish. So more and more we are having either a "hearty appetizer" (finger food) Happy Hour OR a combined Happy Hour/Pot Luck Dinner. Our hosts are not expected to provide all the Happy Hour choices ... we ask attendees to bring their favorite appetizer to share. It works well and there is always plenty of food with something for everyone to enjoy. If you want like foods, you can do a themed happy hour, such as Mexican or Italian fare.

A meat and cheese tray is usually a crowd pleaser. Its much fancier if you call it charcuterie, and serve it on a live edge cutting board.

We do this quite a bit at home for a light dinner. Add some mixed nuts, a few different types of olives, and a few cherry tomatoes and it won't last long...

Check out on line for Pillsbury Crescent Roll recipes. There are a bunch of easy things like cheese and green onion fillings in little triangles or cream cheese with dried cranberries
I make up a single package that yields 16 snacks. Always popular

Now that everyone seems to have margaritas on their minds, I had better cough up the recipe before my street is clogged with Airstreamers demanding drinks!

Into a gallon jug, add:

1 liter 100 percent agave tequila, (750 ml + 1 cup, or 4 cups total)
1 cup Cointreau
1 cup bottled lime juice

1 1/2 large bottles Simply Limeade
or
8 cups cold water
2 (12-ounce) cans frozen limeade, thawed in the refrigerator

Put mixer in last!

or... remove 22 oz (2 3/4 cups) of Simply Limeade from a 52 oz. bottle. This should leave almost 4 3/4 cups in the bottle.
Add 1 3/4 cups of tequila, 1/2 cup each of Cointreau and lime juice.

Serve with fresh lime over ice.
