Winterizing Argosy Minuet with heater disconnected

Hello Everyone!
I would like to winterize my trailer which I bought this summer with a leaky water heater which the previous owner disconnected(bypassed). Can I still winterize the water lines/etc. and not winterize the water heater (which hasn't been used for a while)? I didn't plan on paying for the heater to be reconditoned or a new one yet. Also I didn't plan on storing the trailer in a building (I would do it in a heart beat if the opportunity came around). It will be outside in my yard...should I put a tarp over it during the winter? I've heard this can cause issue with the finish & paint. At least should I cover the rooftop AC unit? Any quick advise on steps to winterize this unit?
Any advice is always appreciated. Thanks in advance!

pull the old water heater out and connect the cold-inlet directly to the hot-outlet.

then, winterize as desired - you'll get all the lines that way.

pump RV antifreeze throughout all the lines - it's cheap enough

cover on A/C isn't necessary
