Potable (fresh) water tanks are made of food-grade materials and are safe to use. We chlorinate the fresh water tank to help avoid bacterial issues... We carry a minimum amount of water on the road, and drain/flush the tank several times a season.
If it's a serious concern, stick to bottled water for drinking and cooking.
Some have installed serious drinking water filters in their AS utilizing micron filters and carbon block filters to get as much 'stuff' as possible out of drinking water. We filter all water entering the AS with a Camco portable filter when filling the fresh water tank or using campground water connected to our system. Also use a good pressure regulator to avoid blowouts in the hose...
Because dogs generally have sensitive tummies, we carry a couple cases of good bottled water on our trips for human and dog drinking purposes, and make sure we keep them in a controlled temperature area. We use them all up well before the expiration date, or failing that, use them for watering houseplants.
