Airsteam restaurant help
Project. Convert an airstream into a mobile restaurant.
I need to know what model will fit the bill, keep in mind (I want a retro look)
Equipment that will need to be installed:
Need to put in 48" commercial griddle
6 foot hood.
Two deep fryers
Refrigeration
3 bay sink
hand washing sink.
Issue: Power
I will need to run refrigeration overnight, what is the best way to do that.
Generators, batteries?
Waste water for bathroom.
Where do I dump it or do port a potty companies take care of it?
I can do 90% of the work myself.
I can do , plumbing, electrical, inside panels.
The only thing I would need to have done is the service window cut out
(the flip up hatch kind)
Any help would be appreciated.

I do see these kinds of conversions come up for sale a couple times a year. It would probably be easier to buy one already finished than to reinvent the wheel. At least if you could find some to look at you might get some ideas about how you want yours laid out.

and you might want the quietest most powerful gen set you can put in. As for the waste water, most of us non-commercial users dump at the RV campgrounds, or a locally provided dump station. You might contract with a truck to remove yours on a more regular schedule.
Maybe owners of a similiar operation will chime in here.

One of the European members on the board did something similar with their unit, maybe try contacting "kneepie" for some ideas.

Are you planning on being mobile or moving. You might want to check with your local board of health or who ever regulates food service in your area.
