We've taken both. Tunnel easily the best and cheap if you are heading for central France or Germany/Italy/Scandinavia. For western France, we usually take the ferry to Caen. Newhaven also good and cheaper. It chucks you out further west so better for the west coast/Spain/Portugal, although obviously depends on how long you go away for. We usually take 2-3 weeks in Summer with the kids. This time we will drive one way, head for Perigord (Dordogne), a quick stop in the Pyrenees for some rafting and then back on Brittany Ferries flagship (Port Aven) from Northern Spain to Portsmouth. Expensive, but a very good service. I have a discount code if you ever use them.
