Inadequate RV inverter

Like all of you RV trailer and motor coach owners, my 2023 Globetrotter came with a woefully inadequate 1000W inverter.
With only a 1000 watts, I couldn’t boil water, make espresso, use a toaster or microwave. In other words, these electricity driven gadgets need 1200 watts or more to operate.
While you can upgrade the inverter to a 2000 or 3000 watt model, that is expensive and not that easy for most of us.
I used a portable Ecoflow Delta Mini power supply which weighs just under 24 lbs and can deliver 1400 watts and can boost the output to 1800 watts. In my video I demonstrate using the power supply to make espresso (1560 watts) and boil water.
