Covering Interior Panels

Good morning to all!
We are just getting started on interior restoration of our '86 Sovereign.
We have been discussing about removing panels & covering them in faux leather/vinyl.
Has anyone out there ever done this?
Would love some tips, suggestions, discussions, pictures, etc.
