Try easing up on the weight distribution tension on the hitch, by removing 1 washer out of the stack.
I suspect that there is too much WD tension being applied that the hitch is causing some yaw in the direction of travel. Either too much WD tension, or some imbalance or distortion in the hitch, that causes the vehicle inertial and/or steering sensors to sense a bias that it's trying to correct.
