Going with two is a no-brainier, and you benefit thrice:
1) when spending any time camping in hot and/or humid weather and one unit just can't keep up.
2) when and if one of the two should fail when you're in hot and/or humid weather
3) having two will be very helpful to you some day when you want to get rid of the Airstream. Two heat pumps will make the trailer much more appealing to most buyers.
One more advantage to having two units - at times when you only need one unit to cool the trailer, you can run the bedroom unit when you're in the living area and run the living area unit when you're in the bedroom. That way you don't have to have the noisy unit right over where you're hanging out. Unless, of course, the weather is really hot and you need to have them both running at the same time... And in that case, you're really glad that you have two units!

The one thing that all these responses overlook is the fact that A/C is like money and a thin body; You can't have too much of either!
My father wore a sweater indoors with the A/C set at 80 degrees. I'm comfortable when we forget to shut the refrigerator door and not have to worry about the food spoiling. (ha-ha) Seriously though, air conditioning requirements is a personal comfort level decision we all make. I, for one, would never consider buying
a coach without dual air conditioners! And yes, I'm an A/C design and repairman. I own a 25' Airstream with twin A/C's! Love it.

Besides the obvious facts of two ac units, consider that you're also getting 50 amp service. Most modern campgrounds have 50 amp power which means you won't be juggling using the microwave and toaster at the same time.
50 amps is much more than just 20 additional amps.
50 amps is 2 legs of 120v X 50 amp or 12,000 watts.
30 amps is 1 leg of 120v X 30 amps or 3,600 watts.
Think an ac unit in the bedroom is too noisy? Run the one in the living area while sleeping in the bedroom.
Run one ac for cooling and the other on "fan only" to move the air around.
If using both, set the thermostats slightly differently so the two units don't cycle on and off together. Set one on 72 and the other on 74, for example.

We have a 28' Flying Cloud with 50 amp service and two air conditioners. They work great to cool the trailer on hot & humid Georgia summer days. Sometimes we get lucky and have 50 amps on the pedestal to plug into. Other times we have only 30 amps and use a 30 to 50 amp dogbone and run only one AC.
We've found that a lot of Georgia State Parks, and some private parks, have no 50 amp, but two 30 amp outlets on the pedestal. So I bought this adapter:

We've had cases where we can now readily run both air conditioners on 30 amps, and cases like this past weekend in a private Airstream only park in North Georgia where it worked great for a day and a half, then one of the two 30 amp breakers tripped. Reset the breakers, and everything worked fine again.
Dear wife blames the rice cooker being plugged in, but since the rice came out fine I sorta doubt it. I suspect both compressors happened to start at the same moment and that's what did it. Anyway, the adapter seems to work fine most all the time. We set the zones at different temps, so in theory only one system should run unless it can't keep up.....

This is an old thread. The OP only planned to camp along the west coast ocean. Think 58 for the high in July.
So I'd say it depends upon your camping mission with that trailer. In a 27FB it's a trade-off between the second AC and a sunroof.

Get the 50amp service. In addition to having dual AC’s, you can run the microwave, water heater and pretty much anything else simultaneously. You can’t do that with 30 amp service...
