New Table Top and Bathroom counter

We have a 2015 International Signature with Corian counters in the galley area and are thinking about replacing the tabletop with matching Corian and also the bathroom counter and the top of the nightstand in the bedroom (we have twin beds).

I think that the tabletop and the night stand would be fairly easy but I am concerned about the bathroom and having to remove the cabinet and the plumbing.

Has anyone replaced the Tabletop and bathroom counters? Any suggestions?

We had a new table top and a new top for the nightstand made by a local counter top company and they look great. We used Corian which is more expensive than the other solid state materials but it had the look and color that we wanted.
One surprise was how heavy the Corian was over the formica but it looks much better.

I did Corian with the Corian sink bowl molded in for our 87 Sovereign center bath without taking the cabinet out. We did every other counter top and the small writing table beside the door and the fold down counter beside the stove, but not the large table.
