What'd You Have For Easter/Passover?

We had roast turkey, brown sugar crusted baked ham, a side of salmon, macaroni and cheese with a panko bread crumb crust, mashed potatoes, gravy, deviled eggs, curly leaf lettuce salad with red and yellow beets, baby heirloom tomatoes and goat cheese, dressed with a champagne vinaigrette. Blueberry cobbler for dessert. Oh, and quite a bit of chocolate bunny parts.

Tonight we had ham and bean soup made with the left over ham bone. Gemma actually got the beans out of the pantry, soaked the beans and pulled the ham out of the refrigerator. What a gal!

Last Night

We're at the NorCal Casini Rally.

Last night we brought a fruit and cheese plate to the rally's Happy Hour(s).

Point Reyes Blue
Cowgirl Creamery's Mount Tam
Humboldt Fog
some fancy, schmantzy French cheese called, "Crocodiles Tear" shaped like a small white, fuzzy, moldy, funky goat cheese volcano
some more funky, goaty cheese

with blackberrys, Fuji apples, pears, green and muscat grapes, these huge red grapes the size of figs, assorted crackers and baguette slices.

There will be no images to share, cause seriously, we were a little too eager to get to noshing!

We brought a side of salmon, grilled, with a fennel apple relish.

Anniversary Dinner

Hot dogs with all the fixins' (except for the essential mustard, 'cause we forgot to pack it), cooked over the campfire at Yosemite National Park's Upper Pines campground.

OK......, disappointed here! IMHO, with Murray's expertise, the "Peach cobbler-esque" should have been done in a Dutch Oven, need some pointers? I'm practicing for the up comming trailer season. Tomorrow I'm trying "Kick Butt Chicken Drum Sticks" (uses 40 garlic cloves), from the renowned eclectic Johnny Nix.

Yes, that would have been neat. Gemma's a big pyro and would have been more than happy to stoke the fire. Come to think of it, Murray likes to get the old campfire started with a blow torch. Hmm, pyro status confirmed! We'll have to pack it next time.

Murray was disappointed that the #12 cast iron skillet didn't make the cut for our recent trip to Yosemite. Come on! It's huge and there were only two of us. (That would have meant the shoe wardrobe/selection would have been significantly decreased and might have reached critical levels at or below acceptable tolerances.)

Thanks for the offer of assistance. We'd love some dutch oven pointers.

Tell Murray they do make smaller sizes. Next week off, I'm trying a Strawberry-Rhubarb Cobbler in an 8" Dutch Oven. That one sure looks small sitting next the the 12"er.

trying something new. layer of sliced potatoes, S&P, ground garlic, thin sliced monterey jack cheese, layer of thin sliced chicken, sprinke of cummin, thin layer of chopped tomitillos, repeat the first layer of ingrediants, then top with a can of Ro-Tel, cover and bake at 300 degrees for a couple of hours, or in a 10 inch dutch oven until done. Don't know how it's going to turn out. Sour cream and a splash of Pico Pica sauce should fill in any of the bland spots.

Holy Moly, lobsters $20 a pound. Ever do clams on the grill? I saw Ina Gartin do it on her show, easy way to cook and serve. Doing boiled shrimp, I cook them you shuck your own, with lemon mustard dipping sauce, fresh pugliese bread and wine. M&Ms for desert.
