Not Our Typical Images

We catered a wedding in Pescadero on July 23rd. Luckily we had friends willing to capture some images for us.

Here's what was on the menu:

Passed Appetizers -

Shanghai Pork Cigarillos with Sweet Chile Dipping Sauce

Mini BLT's - Hobbs' Smoked Bacon, Chiffonade of Romaine and Tomato Concasse on Toasted Brioche Squares with Pineapple Aioli

Caesar Salad Crostini - Garlic and Butter Infused Crostini, Topped with Organic Romaine, Murray's Caesar Dressing and Parmagiano Reggiano Shavings

Vietnamese Herb Summer Rolls - Rice Paper Wrapped Cellophane Noodles, Julenned Carrots and Cucumbers, Black Sesame Seeds, Basil, Mint, and Cilantro, served with a Nuoc Cham Dipping Sauce

Plattered Table Service

Nicoise Salad - Haricot Verts, Red, Yellow and Purple Marble Potatoes, Red and Golden Beets. Grape Tomatoes, Quail Eggs, Olive Oil Packed Anchovies and Capers, Dressed with a Champagne Shallot Vinaigrette

Cold Soba Noodle Salad wit Julienned Cucumbers, Scallions, Black Sesame Seeds with a Sesame. Soy and Rice Wine Vniaigrette

Slow Roasted Banana Leaf Wrapped Kahlua Pork Shoulder with Lomi Tomatoes

Achiote Chicken with Mango and Roasted Pineapple Salsa

Grilled Sides of Wild Salmon with Apple and Grilled Fennel Relish

Steamed Jasmine Rice (Yes, that's right, rice!)

Tropical Fruit "Ambrosia" Salad


After dinner, we offered a hot chocolate bar. The hot chocolate was made with a dark chocolate ganache and LOTS of heavy cream.

Homemade vanilla bean, mint and chocolate marshmallows for the hot chocolate or to roast by the fire rounded out the evening

National Night Out

Last Tuesday was National Night Out.

We had a great time seeing our long time neighbors and meeting new ones.

There was a ton of food. We completely forgot about taking photos but we've written about a few of them before, so we'll attach those images.

First off, Mr. Summerhill's fried catfish! It's always the highlight of the event and we're always nearby to "help" out.

There were the usual cookout staples, hot dogs, links, chicken, ribs and hamburgers. There was coleslaw, potato salad, macaroni salad, spaghetti, baked beans, and french fries right out of the fryer. We brought garlic bread, lots of garlic bread.

And then there was . . . Pancit - Wikipedia, the free encyclopedia (Pancit Bihon to be exact.) Pancit?!!! Yeah, that's what Gemma thought when she saw it on the buffet table! She was almost giddy with curiousity and delight. Seems like we have a new neighbor and he brought it. He also brought some fresh thick-sliced unsmoked bacon that was amazing off the grill. (Sorry no photos, but trust us, it was amazing!)

There was fruit salad and apple pie for dessert.

National Night Out was hosted by our next door neighbors....an old fashion ice cream with hand made ice cream. Really nice.

Hello Again,

Is no one having dinner?

We miss everyone's posts., so we'll start and hope that others join in.

We hosted a tasting two days ago for a charity event that we're catering next month. On the menu we had ahi tuna poke in Persian cucumber cups, pork cigarillos with sweet chile dipping sauce, mini BLTs with pineapple aioli, caesar salad bites, nicoise salad, achiote chicken with grilled pineapple and mango salsa, grilled salmon with fennel apple relish, roasted yukon gold and purple potates and last but not least, four cheese risotto with black truffle oil.

We've posted most of the images here before and you can see many of them on Murray's Facebook page: Murray Cruickshank Catering and Consulting | Facebook If you're feeling so inclined, please "Like" us. We'd really appreciate it.

So, . . . instead of images of the food, we thought we post an iPhone image of what we cooked most of the food on. (There's four cheese risotto in the small pot on the front right burner.)

Pulled pork sandwiches and "tortino misto"

The other night we had "tortino misto" that my wife made to go along with pulled pork sandwiches on homemade buns. I eat like a royalty! I'm so fortunate to have married such a gourmet chef!

Made a big pot of vegetable soup with carrots, parsnips, celery, onion, bell pepper, cabbage, 2 stock cubes, garlic powder salt and Maggi sauce.

Cook 10 minutes in a pressure cooker.

While it was cooking toasted some garlic bread topped with old cheddar cheese from the Ivanhoe cheese factory up the road.

It was delicious and just the thing for a cold day.

Kottbullar!

We went to Ikea on September 30th.

Guess what we had for dinner? Kottbullar with graddsas. Swedish meatballs and gravy. We even attempted to recreate the serving suggestion on the Graddsas package. Potatoes from scratch.

Coming soon . . . gravlax with honey mustard dill sauce.

Ok, so it is 3:49PM and I'm getting hungry after looking at all of these great pictures! I guess that means that I'm going to have to text Mrs. GinMame and find out what is for dinner or run across PCH (Pacific Coast Highway) to the 7-Eleven for a snack.
