Rally pot luck menus
The highlight of a rally for me is the pot-luck dinner since I love to try new foods. Unfortunately, I am diabetic and controlling it by not eating carbohydrates (I average about 40 grams of non-fiber carbs a day). This means I am pretty much limited to meat dishes, salads, and vegetables. Because I am so limited, I always take a meat dish. Here is the recipe for my usual pot-luck dish.
2 packages of marinated chicken thigh fajitas
1 large green pepper, 1 large red pepper, 1 medium onion
shredded Monterey jack cheese, cilantro, salt, pepper
Cut onion and peppers in strips about the size of the fajitas, mix with the fajitas in a disposable aluminum casserole pan. Season with salt and pepper. Cover with cheese. Sprinkle with cilantro and bake at 350 for 40 minutes.
I have never carried any of it back to the trailer.
