OAMC-Anyone doing it???

Prior to my double knee replacement I made a bunch of dinners ahead and froze them. We have really enjoyed having ready made - homemade meals that I have been making lots of meals ahead.
Tonight I made my dad's spagetti sauce (double batch) and his lasagna. Have a big pan for this weekend when our great grand kids will visit. Have another pan for taking on a non-a/s trip next month. Plus several more pans of the lasagna to take with us this camping season. Also freezing some sauce for spagetti later.
Next week plan on making a few pans of chicken enchilladas and some beef enchilladas.
Have been freezing these dishes in smaller disposable pans for just the two of us, but also make some bigger pans for "company" and/or a rally.

Have no idea how far, but if you are ever in our area, you are most welcome to dine with us. Wish we could make the Casini trip, but won't work this year. Have truely enjoyed Lili's story and the part you have played in it.

This OAMC is really getting to be a favorite of mine. Make a few meals and freeze, then take off time. Tonight we had Corned Beef and Cabbage dinner, all I had to do was put it in the oven. Planning on making a lot more meals to have on hand for this coming camping season. Which will be right after we get thru our next expected snow storm.

Hi, we pre-make [cook] our meals for every trip we take with our trailer. There's a lot of things that we want to do besides messing up our trailer's kitchen. Sometimes we pre-cook steaks and spaghetti sauce at home too.
