How wierd that I came across this thread this evening! We had tomato sandwiches for dinner tonight -- normally just tomatoes on them, but tonight we also had Vidalia onions and avocado on toasted Italian bread with the tomatoes, and, of course, mayo. Very good -- tomatoes from our garden.

We also had fresh corn-on-the-cob. What a marvelous time of the year!

Tomato chips?! That's the best idea I've heard yet. Now if only I could get my tomato plants to give up the goods!

My favorite is to stuff the centers and then grilling them. I normally mix what ever is available for the stuffing to include the center of the tomato, bread crumbs(or crackers etc) diced peppers, spices and top with cheese.

About once every 5 years we get a decent tomato crop up here. We get the sun in the summertime but it dosen't get warm enough. I've never eaten a tomato and mayo sandwich but the way Kevin describes it they sure look good. Almost anything you have to eat with your sleeves rolled up is usually good.

Hope is not a plan.

Make mine a tomato sandwich with fresh basil and cheese--drizzled with sun-dried tomato vinaigrette...

Tomato from last summer. That's a dinner plate, the coin is a quarter.
