How wierd that I came across this thread this evening! We had tomato sandwiches for dinner tonight -- normally just tomatoes on them, but tonight we also had Vidalia onions and avocado on toasted Italian bread with the tomatoes, and, of course, mayo. Very good -- tomatoes from our garden.

We also had fresh corn-on-the-cob. What a marvelous time of the year!

My favorite is to stuff the centers and then grilling them. I normally mix what ever is available for the stuffing to include the center of the tomato, bread crumbs(or crackers etc) diced peppers, spices and top with cheese.

About once every 5 years we get a decent tomato crop up here. We get the sun in the summertime but it dosen't get warm enough. I've never eaten a tomato and mayo sandwich but the way Kevin describes it they sure look good. Almost anything you have to eat with your sleeves rolled up is usually good.
