Just used a very simular recipe and it turned out marvelous. I do recommend letting it cool on its own at least for a while. Wife didn't want let it continue to cook in its own heat, so the steam release was a little messy. Put a dish towel over the release to keep the grease contained.

I cover the steam vent to release it most of the time, too, then take the pot out and set it on a trivet as the heating element underneath stays hot/will continue cooking for a long time once it is off.
