These pots were ONLY used as a smoking rig Gene.
I am meticulous when it comes to cooking.

Steve,
I bet the clay really holds in the heat in that cooker...
the sides should retain a little smokin juices over the years and really add
some good flavoring...

G,
The pot really does hold the heat in since it is a great insulator. Metal radiates too much heat to keep the heat at a constant 210-220 degrees.
The drippings are cemented in the walls of the pot, but it's more smoke than anything. If I drive in the car it smells like I have a BBQ running in it.

I was in Alaska later in June. Our host smoked up a bunch of silver salmon in his Canadian built Bradley Smoker -- worked like a charm. Those things are built just like a dorm fridge with the magnetic door gasket. They're a bit pricey and available at Cabelas. Gene, thanks for input on something else that works well!

That pan has wood chunks. It sits on the hot plate generating smoke. The meat rests on the grill grate that sits inside the pot. COver with a lid, and add the replacement gas grill thermometer in the hole.
Cheap, efficient, awesome.

Hi Steve,
Always glad to see another Good Eats Fan. I think even AB would be impressed with your smoker. I believe I’ll copy your design rather than his.

Good Eats is definately on my Tivo, and I have made several of AB's cooking rigs (Jerky/Herb/Fruit dehydrator, Turkey Fryer Derrick, Smoker, etc).

I have a Dish HD DVR. One of the Voom channels carries Good Eats in HD, although mostly old episodes. I remember seeing that Alton Brown was a cinematogpher. Explains the cameras in the oven, cabinets, fridge, etc.
